You're right the mage team is very active, and that does leave other mages in a tricky situation, HOWEVER, you're making two assumptions which are not correct:
1. You assume that all 3 mages attend every raid night
2. You're assuming we only ever run with 3 mages
3. You assume you're only ever invited to 25 man runs
The reality is, the three mages are not only active, we're pretty good with DPS (well, except for bunny, but we like to make carrot jokes). Remember, we've got you as "in training" as your gear needs some serious improvement before you become competitive on the DPS charts. And the reality is, we all need high DPS for ICC 25.
There are occassions when we run TOC25 (as you're well aware, you did very well the other night loot wise - which is great, means you can get that essential gear ASAP). I know that none of the 3 active mages need anything from TOC25. This means I prefer to come on my pally, bunny will come on one of his alts, or disappear, and reggie won't roll on anything. It means that the people you're rolling against are mostly alts (and will prolly have really low PRIO as a result. READ: You'll get a lot of loot).
So, one option is of course to wait for nights like those. Another option, ICC10. We run them regularly on Fri/Sat/Sun evenings, and we're trying to ecourage people "In training" and other people who don't manage to get a spot on Wed/Thu to run then too. Come to those - better gear there than TOC25.
Regarding mages loggin out on "farm" bosses, I think we're a long way from wanting to do this, but I do speak for myself here. First off, they are not really "farm" bosses by my definition, we still like to have folks flasks, well fed, and careful not to make mistakes. Also, there is an EP award given whilst we're doing these bosses, that EP award translates directly to loot dropped by the bosses we DO need loot from.
Meaning it's unlikely, until most/all the loot we need has been dropped that any mage (or other main), would rather not partake in, and lose EP (i.e. PRIO) for that.
Your suggestions are valid, and borne out of a genuine desire to improve your gear, and by extension your value to the guild, and I applaud that. As mentioned on your apply though, there will be a period of time between your acceptance to the guild, and your regular raiding. This is that period. Keep gearing up, it IS very possible (Calypsu set a new standard when we went from dinging 80 to being ICC25 ready in ONE WEEK!). It cost him 15k gold I believe, and more time than most of us have available, but it is possible.
Once you're at the level which we need you at, your gear, and your EP will ensure regular invites to the raid. The beauty of EPGP is that no other mage really cares that there's another mage he'd potentially have to share his loot with (in case you're worried about that).
The short answer is this:
1. Gear up more
2. Run ICC10 more
3. Get more ilvl264 stuff (crafts, etc) - see

4. Be online every raid night at 19h45 - this will net you 4k EP, which will up your standings in the guild
5. Patience. All things are evened out in the long run. Stick it out, and your dedication and perseverance will be rewarded.
Regarding your druid alt, I'm going to keep that question thrown out there to the healing officers, but would suggest you focus on one main for purposes of gearing and usefulness to the raid.
